Ingredients ½ 1× 2× 3×

• 4 large boneless chicken breasts
• 4 slices smoked turkey or smoked beef
• 4 slices Swiss cheese, or mozzarella and cheddar
• 1 cup flour, and 2 eggs beaten with 1 tablespoon milk
• 2 cups coarse panko breadcrumbs
• Salt, black pepper, garlic powder and paprika
• Oil for frying

Instructions

1. Butterfly each chicken breast with a sharp knife, open it like a book, lay it between two sheets of baking paper and pound it thin and even
2. Season the chicken with salt, black pepper, garlic powder and paprika
3. Lay a slice of smoked meat and a slice of cheese on each breast, leaving a margin at the edges
4. Roll each breast tightly into a cylinder and press the ends to seal
5. Wrap each roll tightly in cling film and freeze for 30 minutes so it holds its shape
6. Coat each roll in flour, then beaten egg, then the coarse breadcrumbs
7. Fry the cordon bleu in medium-hot oil for 10 to 12 minutes, turning, until golden and cooked through
8. Rest for 3 minutes, then slice on the diagonal to show the melted cheese and serve hot
