Ingredients

3 bunches fresh rocket, washed, thick stems removed
½ cup fresh pomegranate seeds
½ cup lightly toasted walnuts
¼ cup Parmesan or feta
2 tablespoons aged balsamic vinegar
1 tablespoon pomegranate molasses and 1 teaspoon honey
3 tablespoons olive oil and a little salt

Instructions

Wash the rocket and dry it well in a salad spinner so its water does not dilute the dressing
Toast the walnuts in a dry pan for 2 minutes to release their oils
In a bowl whisk the balsamic, pomegranate molasses, honey, salt and olive oil until blended
Spread the rocket on a wide serving plate
Scatter the pomegranate seeds and toasted walnuts over the leaves
Top with shavings of Parmesan or cubes of feta
Pour the balsamic dressing over the salad just before serving
