Ingredients ½ 1× 2× 3×

• 2 heads fresh romaine, roughly chopped
• 2 grilled chicken breasts, sliced
• 1 cup baguette cubes toasted with olive oil and garlic
• ½ cup Parmesan, thinly shaved
• 3 tablespoons mayonnaise and yogurt
• 1 garlic clove, crushed, and 1 teaspoon Dijon mustard
• 1 tablespoon lemon juice, salt and black pepper

Instructions

1. Season the chicken with olive oil, salt and pepper, grill on a ridged pan until cooked through and slice
2. Toast the bread cubes in the oven with a pinch of garlic powder and olive oil until crisp
3. In a small bowl whisk the mayonnaise, yogurt, garlic, lemon juice, mustard, salt and pepper
4. Put the cold, well-washed romaine in a large serving bowl
5. Pour over half the dressing and toss gently
6. Arrange the grilled chicken and croutons over the lettuce
7. Top with Parmesan shavings, pour over the rest of the dressing and serve at once
